Goodbye, RAW Taipei!

今天（2024年12月28日）是台北RAW的最後一個營業日，也意味著由名廚江振誠（André Chiang）主理並親自參與營運的最後一家餐廳正式結束，並將轉型為廚藝學院。未來，他將更加側重於策展和顧問的角色，甚至可能朝“男明星”的方向發展（這是我的玩笑，因為他最近的確拍了不少廣告）。

今年，André在新聞發布會中提到，每當開始一個項目時，他總是會決定它結束的時間，這樣能讓他更加珍惜每一天。

「最後的圓舞曲」
如果這是你最後一道料理，你會做什麼？
如果這是你的最後一支舞，你會選擇與誰共舞？

「最後的圓舞曲」展現了一種“讓每個細節都變得重要”的心態：穿上你最喜歡的衣服，踏上最合適的鞋子，化上完美的妝容，選擇一首能觸動靈魂的音樂，全心投入，彷彿這是最後一次表演。

回顧RAW過去十年的歷程，我們透過時間與事件淬煉出一個關鍵詞——「價值」。我們學會理解並擁抱真正的價值，珍惜屬於本地的質感、身世與傳統，承擔壓力與責任，也更能理解差異中的美與特別。

這樣的想法的確給了我一些啟發。未來五年內，如果某個項目未能達到我的預期，我是否也能夠果斷放手？目前我還沒有答案。但當他在達成目標後選擇離場，我希望未來自己也能像他一樣任性——前提是，你必須足夠努力！

Today (December 28, 2024) marks the final day of service at RAW Taipei, which also signifies the official closure of the last restaurant helmed and personally operated by the renowned chef André Chiang. RAW will soon transform into a culinary academy. Moving forward, he will focus more on curating and consulting roles, and may even venture into a "celebrity" path (just kidding, of course, as he has recently appeared in numerous commercials).

This year, at a press conference, André mentioned that whenever he starts a project, he always decides in advance when it will end, so that he can appreciate every day more deeply.

"The Last Dance “, reflects a mindset of making every detail count: wearing your favorite outfit, stepping into the perfect shoes, putting on the perfect makeup and giving your full attention, as if this were your final performance.

RAW’s journey over the past decade reflects on a key word: "value." We have learned to understand and embrace true value, cherishing the local traditions and better understanding the beauty and uniqueness.

I’m also much inspired: In the next five years, if a project does not meet my expectations, could I also decisively let go? I’m not so sure. But when André chooses to step away after achieving his goals, I hope that in the future, I too can be as free-spirited as he is—provided that you’ve worked hard enough!
