✨Ingredients:

250 gms rigatoni pasta
3 tbsp olive oil
6-7 cloves of garlic, finely chopped
11/2 tsp red chilli flakes, crushed
1/2 red onion, finely chopped
2 tbsp finely chopped parsley
1/2 tsp salt plus more for cooking the pasta
1/2 tsp black pepper powder
1 red chili, finely chopped
11/2 cup ‪@muttipomodoro‬ passata
6-7 leaves of basil
Parmesan cheese (optional) for serving

✨Method:

Put a pot of water to boil, add the pasta along with salt and oil and cook for two mins less than the package instructions.
Next pour olive oil to a non stick pan, once heated add in the onions and garlic and sauté for 2-3 minutes on medium heat. Then add the crushed red chilli flakes as well the chopped red chillies and sauté for a min or two.
Add the parsley and cook for just brother seconds. Pour in Mutti’s tomato passata and sprinkle some salt and black pepper on top and allow the sauce to cook on simmer for 15-20 minutes.

Now add some reserved pasta water along with the cooked pasta and stir & toss over medium heat until the pasta is well coated.
Stir is some fresh basil leaves on top just before removing from heat. Give it all a good toss and serve this super delicious Rigatoni Arrabbiata immediately.

✨Optional: sprinkle some Parmesan cheese on top and enjoy!

The secret to make the best Rigatoni Arrabbia to undercook the pasta , then finish cooking it in the pan with the sauce adding the pasta water to get the most delicious Rigatoni Arrabbiata.
