Welcome to this Mega Freezer Meal Prep video, where I share how I freeze 36 meals for 12 people, filling out freezers for six weeks worth of dinners! These include both pre-cooked 'heat and eat' dinners, as well as slow-cooker 'dump and go' dinners for the best of both worlds. This is the first of two videos for this round of freezer meal preparation, the next will be published in a weeks time, so be sure to subscribe and hit the bell to be notified when that one is up!

I have been freezer meal prepping on and off for about 14 years now, ever since I was expecting my third child and decided it'd be a good idea to plan for a smooth postpartum. Since then, having home-cooked, nutritious meals prepared and filling my freezer has been a huge help during many busy life stages! Since my first batch of freezer meal prep all those years ago, I have prepared for the postpartum an additional seven times, and having those meals available to nourish our family during such a big life transition has been a huge help! As well as postpartum freezer meals, I have also freezer meal prepped for times that I am working full-time while juggling motherhood; and during other extra busy times, such as in the lead-up to Christmas and the holidays. With so much to prepare for at this time of year, it's great to have one less thing to 'worry' about in ones day - such as what to prepare for dinner! So here I am, with six weeks worth of dinners ready and waiting in my freezer, so that I can focus on this busy time of year. When this six weeks worth of meals have been used, I will be ready for round two of this end-of-year freezer meal prep extravaganza! Yes, in around six weeks time, I will do this all again, in preparation for holidays and spending extra time with family and friends while a freezer meal dinner bubbles away in the slow cooker!

Super-Simple Chicken and Vegetable Curry - 4 Ingredients! (Slow Cooker Freezer Meal):
Chicken portions or whole chicken
vegetables of your choice or 1kg pkt frozen vegetable mix
Two cans coconut milk
1/4 cup curry powder
serve on rice - with fresh coriander (cilantro) and lime to add charm.

Pulled-Pork (Slow-cooker freezer meal):
2kg (4-5lb) pork shoulder
Chipotle marinade
1/4 cup lemon juice
salt and pepper to taste
1 red onion, diced
After pork has been slow-cooked, shred the meat and crisp it up a little, either in the oven or on a hot plate, with a little oil.
Serve in tortillas with all the toppings (avocado, lettuce, tomato, sour cream, etc); OR serve on nachos!

Lemon Garlic Chicken with Fresh Rosemary (Slow-cooker freezer meal):
Chicken thigh fillets
1/4 cup lemon juice
1 teaspoon garlic powder
1 tablespoon (or about four cloves) garlic
fresh rosemary (or any other fresh herb of choice)
Cook this meal in the slow cooker on low for around six hours. Serve alongside some vegetable dishes of choice (steamed greens, roast veg, sauteed, or salad) and some rice, bread or noodles if you would like to include a decent carb.
