Dough:
75 g (starter- recipe below)
65g (1/2 cup) sugar
110 g (1/2 cup) warm water
60g (1/4 cup) whole milk
2 g (1/2 tsp) baking powder
275 g (2 1/4 cups) all purpose flour
10 g (1tbsp) unsalted butter
1/2 tsp salt

Starter:

to have a strong starter, you’ll need to make this starter and feed it for at least 7 days.
in a jar/tall cup, add 20g flour & 20g of water and mix until incorporated. Cover the top and leave on the counter until the next feed on the next day. This starter needs to be fed once a day.

How to feed starter:
take half (10g) of the starter out and discard or save it in the fridge for different recipe (like pancake, waffle, muffin, etc). Then add 10g of all purpose flour and 10g water and mix well. Then cover and leave on the counter until the next feed on the next day.

How you know your starter is ready?
when you feed your starter, use a rubber band or marker to mark where the starter starting point is so you can see how much it grow. The starter should grow double (or more) in size in about 2-4 hours. This is a good sign that your starter is ready to be used in the recipe.
