Homemade Hummus Ingredients

● 1 lb (454 g) dried chickpeas
● 1 tsp (5 mL) baking soda
● 1 garlic bulb
● 1 cup (250 mL) EVO
● 1 tsp (5 mL) cumin seeds
● 1/3 cup (83 mL) tahini
● juice of two lemons
● sumac for garnish
● 1 tsp salt

How to Make Homemade Hummus

Soak 1 pound of dried chickpeas in a large bowl for at least 8 hours.
Simmer 1 bulb of garlic in 1 cup of EVO for half an hour.
When done soaking your chickpeas, strain them and rinse them well.
Put them in a pot with about 2 inches of water above the chickpeas.
Don't add salt yet, because that would lengthen the cooking time.
Cook the chickpeas for 45 minutes to an hour.
Remove the foam to prevent spillage.
Add 1 tsp of baking soda. (This softens the chickpea skins.)
The chickpeas are ready when they're very soft, but not coming apart.
Strain and rinse again.
Pour the chickpeas back into the pot.
To Remove the skins from the chickpeas: Put your hands in the water and scoop up some c
chickpeas. Gently rub them together between your hands to remove the skins. Do this a few times to remove as you can. Scoop out the skins and strain the chickpeas again.
Remove the seeds from the lemon juice.
Add 1 tsp of cumin seeds to a hot pan on medium heat.
Constantly stir or jiggle.
Toast for about a minute.
Grind the seeds with with a mortar and pestle.
Add the chickpeas to a food processor and blend.
Add the olive oil and garlic, juice of two lemons, 1/3 cup tahini, ground cumin, and 1 tsp salt.
Mix for a long time so that your hummus turns out silky smooth.
Taste and add more salt if needed.
To serve, drizzle with more olive, and garnish with sumac, paprika, or cayenne pepper.
