🗝️ Veggie and Cheese Quiche
1 deep-dish pie crust
1 cup chopped bell pepper
2 cups chopped spinach
1 large tomato, sliced
8 oz shredded mozzarella
4 eggs
1 cup cream
Chopped herbs
Salt and pepper to taste

Preheat the oven to 350 F. Sauté bell peppers for 5 minutes. Add spinach and allow to cook down. To make the custard, crack eggs into a bowl. Add cream, salt and pepper. Whisk. Roll out a pie crust in a deep-dish pie pan. Pour veggie and cheese mixture on top. Pour egg custard on top of that. Lay sliced tomatoes on top and sprinkle herbs and a bit more shredded cheese. Bake for 50 minutes or until golden brown and fully cooked.
