These peanut butter cookies are crispy on the outside, soft on the inside, and have a pretty sugar coating that gives them that crackle-top effect. They're a super easy and delicious treat, perfect for sharing! Ingredients and instructions below.

Ingredients:
• 1/2 cup room temperature salted butter
• 1/2 cup granulated white sugar
• 1 egg
• 1 teaspoon vanilla extract
• 3/4 cup peanut butter (crunchy or smooth)
• 1 3/4 cups all-purpose white flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• crackle top: a few teaspoons of granulated white sugar

Instructions:
1. Cream butter and sugar together in a large bowl. I find it helps to squish the butter against the sides of the bowl.
2. Stir in egg, then add vanilla extract and peanut butter. Mix together.
3. Sift in flour, baking soda, and salt. Mix. Cover bowl and leave in fridge for 20-30 minutes. This step helps prevent the dough from spreading too much while baking.
4. Roll dough into ping-pong sized balls. Roll each ball in white sugar and place on baking sheet. I did 3 rows of 6. Gently flatten the balls.
5. Bake at 375°F for 12 minutes. I rotated my baking sheet halfway through.
