To filter DHCP packets in Wireshark, use the display filter bootp since DHCP is based on the BOOTP protocol. This will show all DHCP discovery, offer, request, and acknowledgment messages.

For more specific filtering, use bootp.option.dhcp along with message types such as 1 for Discover, 2 for Offer, 3 for Request, and 5 for ACK, for instance, bootp.option.dhcp == 1 to view only DHCP Discover packets.
