Here's a recipe for Dhaba Style Chicken Bhuna Masala using 1.5 kg of chicken:

Ingredients:
- **Chicken**: 1.5 kg, cut into medium-sized pieces
- **Onions**: 2 large, finely sliced
- **Tomatoes**: 2 large, finely chopped
- **Green chilies**: 4-5, slit
- **Ginger-garlic paste**: 2 tablespoons
- **Yogurt**: 1/2 cup
- **Cumin seeds**: 1 teaspoon
- **Bay leaves**: 2
- **Cinnamon stick**: 1 inch
- **Cloves**: 4-5
- **Green cardamom**: 3-4
- **Red chili powder**: 2 teaspoons
- **Turmeric powder**: 1 teaspoon
- **Coriander powder**: 2 tablespoons
- **Garam masala powder**: 1 teaspoon
- **Kasuri methi (dried fenugreek leaves)**: 1 tablespoon, crushed
- **Fresh coriander leaves**: For garnish, finely chopped
- **Mustard oil**: 4-5 tablespoons
- **Salt**: To taste


Prepare the Base Masala :-

- Heat mustard oil in a large heavy-bottomed pan or kadhai. Once hot, add cumin seeds, bay leaves, cinnamon stick, cloves, and cardamom. Sauté for a minute until fragrant.
- Add the sliced onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies. Sauté for another 2-3 minutes until the raw smell of the ginger-garlic is gone.
- Add the chopped tomatoes and cook until the oil starts separating from the masala.

3. **Cooking the Chicken**:
add chicken to the masala and mix well. Cook on high heat for 5-7 minutes until the chicken is browned.
- Reduce the heat to medium and cook the chicken in its juices for about 15-20 minutes, stirring occasionally. The chicken should start to absorb the flavors and turn tender.
- Add coriander powder and garam masala powder. Mix well and cook for another 5-7 minutes until the masala coats the chicken well.

4. **Bhuna Process**:
- Continue to cook the chicken on low heat, stirring frequently until the masala thickens and clings to the chicken pieces (about 10-15 minutes). The oil should start to separate, and the masala should look rich and flavorful.

For tadka : - heat a tadka pan add 2 tbsp ghee add 1tsp deggi lal mirch powder
- Crush and add kasuri methi, mix well, and cook for another 2 minutes.

5. **Final Touch**:
For smokey flavour :- burnt charcol

transfer in small sized bowl put on 1 tsp ghee & 1 tsp kasuri methi put on chicken curry after comes smokes cover with lid for 2 min 😀
- Garnish with fresh coriander leaves.

6. **Serve**:
- Serve hot with naan, roti, or steamed rice.
