Alasande Ani Batata Sukkein | Yard Long Green Beans & Potato Sukke

Konkani style curry with fresh yard long green beans and potatoes in a mildly spiced coconut masala is a perfect side dish with any Indian meal.

Ingredients:
• 1 Tsp oil roasted Urad Dal/Split white lentils.
• 1 Tsp Mustard Seeds.
• 2 Tsp Coconut oil.
• Salt to taste.
• A marble sized piece of fresh tamarind(Soaked in Water).
• Few curry leaves.
• ½ Cup medium sized chopped potato.
• 4 to 6 oil roasted dry Byadagi red chillies.
• 1 Cup freshly grated Coconut.
• 1 Cup of chopped Yard long green beans/Alasande/Chinese long beans/Snake beans.

Method
• Grind roasted Urad dal, soaked Tamarind, roasted red chillies, grated Coconut along with some water to a Fine paste and Keep aside.
• In a Pan cook chopped potatoes and chopped long yard beans along with some water for 5 to 6 minutes.
• Once the veggies are cooked add the grounded masala and some water. Mix well.
• Add salt to taste and mix again.
• Cover the lid and cook the masala on low heat for 4 to 5 minutes.
• The masala is ready.
• For tempering, heat coconut oil in a saucepan and add mustard seeds. Once they splutter add curry leaves.
• Pour over the curry and mix well.
Enjoy the semi dry curry with hot rice and dal.
