✨ In this episode, we bring you two soul-satisfying dishes:
🥔 Lucknowi Jeera Aloo Salan with Mutton – A royal Awadhi-style curry where tender mutton is simmered with jeera-spiced potatoes in a rich, flavorful gravy that’s slow-cooked to perfection.
LUCKNOWI JEERA ALOO SALAN WITH MUTTON
Heat 1/2 cup of Oil
Splutter 1 tsp of Cumin Seeds
4-5 sliced potatoes
Add it to the oil and fry golden & crisp
Add 2 bay leaves
2 black cardamom
2 green cardamom
1” cinnamon
1 mace
Let it release it’s aroma
Add 3 onions finely sliced
Sauté the onion till golden in colour
Add oil if needed, 2-3 tbsp
Add 2 tbsp of chilli powder
1 tbsp of coriander seed powder
1 tsp cumin seed powder
1 1/2 tsp of garam masala powder
Add 2-3 tbsp of water
Sauté it for a few seconds
Add 1” ginger finely chopped
Add 6 large cloves of garlic finely chopped
Increase the flame to a high and add 1 kg
Seer the mutton for 4+5 minutes on a high flame
Add 3 tomatoes finely chopped and sauté it till the liquid from the tomatoes evaporates
Add 750 ml of water
Add salt to taste
Stir it well
Cover and cook for 15-20 minutes
Add the jeera aloo after 15-20 minutes
Cover and cook it on a low flame for another 5-6 minutes or until Jeera Aloo is done
Serve
🥦 Cauliflower Matar Sabji – A comforting North Indian sabzi made with fresh cauliflower, green peas, onion base and homestyle masalas — simple, wholesome, and packed with everyday goodness.
CAULIFLOWER MATAR KI SABJI
Take 1 1/2 cup of yogurt
Add 1 cup of freshly chopped coriander
Mix it well
Keep it aside
Take 1 tbsp of fennel seeds
1 tbsp of kalongi
1/2 tsp if methi seeds
1 tsp of cumin seeds
1 tsp of mustard seeds
Lightly crush these spices in mortar and pestle
Grind
3 medium sized onions
3 large cloves of garlic
1/2” ginger
Heat 3 tbsp of oil
Add 5-6 green chillies slit
Add the onion mixture and sauté it till it turns pink
Add the grounded spices
Lower the heat and add the yogurt
Add 1/2 tsp of turmeric powder
Sauté the masala till the oil separates
Add 1/2 kg if cauliflower florets washed and cleaned well
Mix well
Cover and cook
Add 1/2 kg of fresh peas
Add salt accordingly
Mix it well
Cover and cook till the peas are done
