** this Mole is sweet and spicy if you don’t want yours to come out spicy simply substitute NM chile pods for Guajillo

Ingredients:
5 lbs chicken
130 g chocolate disk(Ibarra or Abuelita)
A small piece of pilóncillo
3 cloves
4 all spice berries
1 tsp peppercorn
1/2 tsp cumin seeds
1/2 tsp thyme
1/2 tsp marjoram
1 inch cinnamon stick
1 tbsp sesame seeds
2 tbsp- sliced almonds, peanuts, pecans, pepitas, raisins
1/2 bolillo bread
1 corn tortilla
1/2 cup animal cracker
1 small onion
1 Roma tomato
4 garlic cloves
1/2 plantain
8 New Mexico or guajillo chile pods
4 chile pasilla/ancho
2 chile negro
1-2 Chipotle peppers
