Chicken Cacciatore Recipe

Ingredients:
    •    1 whole chicken, cut into pieces
    •    1 cup all-purpose flour (seasoned with salt & pepper)
    •    ½ cooking onion, chopped
    •    1 red, 1 green, and 1 orange bell pepper, sliced
    •    4 tbsp olive oil
    •    2 tbsp butter
    •    ¼ cup Kalamata olives (or black olives)
    •    28 oz crushed tomatoes
    •    ¼ cup Gratsi red wine
    •    3 bay leaves
    •    2 sprigs each of rosemary and oregano
    •    Salt and pepper, to taste

Instructions:
    1.    Season chicken with salt and pepper, then dredge lightly in seasoned flour.
    2.    In a large pan over medium heat, heat olive oil and butter. Sear chicken pieces until golden brown. Remove and set aside.
    3.    Deglaze the pan with red wine. Once evaporated, add onions and bell peppers. Sauté until softened, then add crushed tomatoes and a jarful of water.
    4.    Return the chicken to the pan. Add bay leaves, herbs, olives, and additional water if needed to cover the chicken.
    5.    Season again with salt and pepper. Cover and simmer on low heat for 1 hour until tender.

Serve warm with crusty bread or over pasta.
