And, ther are different kinds of vinegar to go with the different parts of crab meat, recommended by Chef Wang.

Leg Meat: Rice Vinegar

Claw Meat: Zhen Jiang Vinegar

Roe: Mixed Vinegar

Body Meat: Fruit Vinegar
