How to Cook Korean Nakji-bokkeum (Stir-Fried Octopus)

For Cleaning the Octopus:

• Flour
• Rock Salt

Ingredients:

• Garlic
• Ginger
• Onion
• Green Chili
• Onion Leeks
• Sesame Leaves
• Chili Flakes
• Korean Soy Sauce
• Sugar
• Corn Syrup
• Oyster Sauce
• Plum Syrup
• Black Pepper


Procedure:

1. Clean the Octopus: Rinse the octopus and coat it with flour and rock salt to remove any sliminess. Rinse thoroughly and set aside.

2. Prepare the Vegetables:

• Mince the garlic and ginger.
• Slice the onion into thin strips.
• Chop the onion leeks into small pieces.
• Cut the sesame leaves into thin strips lengthwise.
• Sauté the Aromatics: Heat oil in a pan and sauté the onion, green chili, and onion leeks until fragrant.

3. Add the Sauce: Immediately add the sauce ingredients (chili flakes, Korean soy sauce, sugar, corn syrup, oyster sauce, plum syrup, and black pepper) to impart a smoked flavor.

4. Add the Octopus: Once the mixture starts to bubble, add the cleaned octopus.

5. Finish Cooking: Add the sesame leaves and continue to cook until the sauce has reduced and the octopus is well-coated and tender.

Serve: Transfer the dish to a serving container.
