How to make a traditional Manx smoked herring; a kipper.

Paul Desmond here speaks about the process, what to watch out for, and some of the tricks and tips of the professionals.
All of this he learnt from decades in the business in charge at Moore's kipper yard in Peel.

Included in this film is unique film footage of the smoking process which remained almost unchanged in over 100 years at the Isle of Man's only remaining traditional kipper yard.
