Pot Rice:

Ingredients for Rice

Oil ¼ cup
Egg 1
chopped garlic 2 tbsp
Chopped ginger 1 tsp heaped
Onion chopped 2 tbsp
Green chilies (chopped) 2
Soy sauce ¼ cup
Siracha sauce 2 tbsp
Chili garlic sauce 2 tbsp
Vinegar 1 tbsp
Boiled rice 3 cups
Spring onions (finely chopped) 1 cup
Coriander leaves (finely chopped) 2 tbsp

Ingredients for Gravy

Star anise 1
Capsicum julienne 1
Onion sliced 1 cup
Fresh red chilies sliced 5
Baby corn 6
Carrot cut into thin strips ½
Cabbage sliced ½ cup
Broccoli cut into pieces 1 small
Mushrooms cut into pieces ½ cup
Spring onion sliced 1 cup


Ingredients for Chicken

Chicken (boneless made into cubes) ½ kg
Salt 1 tsp
White pepper ½ tsp
Garlic paste 1 tsp
Vinegar 1 tbsp
Sambal oleak 1 tbsp
Siracha sauce 1 tbsp
Soy sauce 1 tbsp
Egg 1
Flour 4 tbsp
Corn flour 2 tbsp

METHOD

Mix well leave it for half an hour then deep fry till golden and keep aside. In a wok, heat ¼ cup oil, add one Star anise, 2 tbsp chopped garlic, 2 tbsp chopped onion, chopped ginger 1 tbsp, chopped green chilies 2, fry for 2 mins, add soy sauce ¼ cup, ¼ cup siracha sauce, vinegar 2 tbsp, 2 tbsp sambal oleak, sugar 2 tbsp, salt 1 tsp, black pepper ½ tsp, mix well, dissolve 2 tbsp corn flour with ½ cup of water, add to the gravy, cook till thick, add all the veggies we had prepared earlier, cook for 2-3 mins, add the fried chicken, cook for another 2 mins.

To Assemble

In a platter, put a thick layer of rice followed by lots of chicken gravy, bake in oven on 180 D for 10 mins, serve hot.



Meat Balls In Marinara Sauce:

Ingredients

Onion grated ½ cup
Chicken mince ½ kg
Bread crumbs ½ cup
Milk 1/3 cup
Parmesan cheese 2 tbsp
Egg 1
Garlic crushed 1 tsp
Basil leaves 1 ½ tsp
Salt 1 tsp
Oregano 1 tsp
Crushed red pepper 1 tsp
Oil as required
Fettuccini pasta boiled 3 cups

Ingredients for Marinara sauce

Olive oil ¼ cup
Garlic 1 tbsp crushed
Tomatoes (blanched skin removed) 4 chopperised
Tomato paste ½ cup
Dried basil 1 tbsp
Sugar 1 tbsp
Salt ¼ tsp
Crushed red pepper ½ tsp


METHOD

Chopperize mince in onion, bread crumbs, milk, cheese, egg, garlic, all the spices until smooth, remove and form into small balls, remove and pan fry for 10 mins, make marinara sauce, add meat balls to sauce, simmer for 10 mins, serve meat balls in shallow balls over bed of fettuccini, top with sauce, serve with additional cheese if desired.

METHOD FOR SAUCE

Heat olive oil in a sauce pan, add garlic, cook for 2 mins, add tomatoes, tomato paste, all the seasonings, and boil for 10 mins on low flame.





Cheesy Garlic Bread Sticks:

Ingredients for Dough

Flour 2 cups
Sugar 1 tbsp
Yeast 1 tbsp
Salt ½ tsp
Lukewarm water to knead
Olive oil 2 tbsp

Other Ingredients

Melted butter ½ cup
Oil 4 tbsp
Chopped garlic 2 tbsp
Crushed red pepper 1 tsp
Oregano 1 tsp
Mixed herbs 1 tsp
Salt a pinch
Mozzarella cheese 1 cup

METHOD FOR DOUGH

Mix together flour, sugar, yeast, salt and knead this with lukewarm water to a soft dough, apply some olive oil on top, cover and keep it to rise for 2 hours. In a bowl mix melted butter, oil, chopped garlic, crushed red pepper, oregano, mixed herbs, pinch of salt, grease your oven tray or non-stick pan, spread a thin layer of dough with a help of greased hands, apply a generous amount of garlic butter and sprinkle lots of mozzarella cheese, bake in a pre-heated oven on 200 D for 15 mins or till golden.
