Ingredients :

Red Curry Paste:

Dry red chilli (crushed)= 20gms
Garlic = 25gms
Shallots = 40gms
Lime skin = 10gms
Lime leaf = 5gms
Lemon grass = 15gms
Galangal = 15gms
Coriander root = 40gms
Shrimp paste = 15gms

Make into a smooth paste.

Method:

Coconut milk = 200ml
Reduce to a thick paste for 10mins

Add Red curry paste
Cook it for 10mins in slow fire.

Salt

U 10 prawns = 250gms

Coconut milk = 200ml
Water = 200ml
Fish sauce = 10ml
Palm sugar = 15 gms
Thai pumpkin (cubes) = 200gms

Cook for 10mins in slow fire.

Thai Basil = 15 gms
Red Bell Pepper, diced = 50 gms

Garnish with Thai basil, lime leaf
