Stuffed green chillies pickle😍bharwa mirchi Achar
Ingredients
▪️Thick green chillies/ मोटी हरी मिर्च -1/2kg
▪️Fennel seeds/ सौंफ -4tbsp
▪️Cumin/ जीरा -1tbsp
▪️Mixed brown & black Mustard seeds /मिश्रित राई और सरसो - 4tsp
▪️Fenugreek seeds/ मेथी दाना -1tsp
▪️Carom Seeds/ अजवायन -1tsp
▪️Kashmiri red chilli powder/कश्मीरी लाल मिर्च पाउडर - 2tbsp
▪️Turmeric powder/ हल्दी पाउडर -1tbsp
▪️Asafoetida/ हींग -1/2tsp
▪️Dry mango powder/अमचूर पाउडर - 2tbsp
▪️Salt/ नमक - 3tbsp (adjust as per taste)
▪️Black pepper powder/काली मिर्च पाउडर -1tsp
▪️Black salt/कला नमक -1tsp
▪️Nigella seeds/ कलौंजी -1tsp
▪️Mustard oil/सरसों का तेल -500grams
▪️Vinegar/ सिरका -1/2cup

For smoking jar use
Coal / कोयला -hot
Asafoetida/ हींग -1tsp

Method
▪️In a pan add fennel seeds, carom seeds,cumin seeds,black Mustard seeds, brown mustard seeds, Fenugreek seeds and carom seeds dry roast then on low flame then let it cool down.
▪️Transfer it into grinder along with salt, hing, aamchoor, Black salt, turmeric, Kashmiri red chilli and black pepper powder
▪️grind it at pulse mode until powdered.Transfer this into bowl along with Nigella seeds.
▪️in a pan heat Mustard oil then let it cool down
▪️add little oil to powdered spices mix it then add vinegar mix it nicely and stuffing is ready.
▪️wash thick green chillies and fan dry them they shouldn't have moisture now, slit them in between stuff them with prepared powdered mix and put them in air tight container
▪️add remaining mustard oil cover and shake the jar
▪️keep this jar in sunlight for about 3-4 days for longer shelf life.
