After watching more, it turns out he's making another one of the go-to dishes that his family loves: a loose riff on Singapore Noodles (Mei Fun). Red onion, carrots, shiitake mushrooms, tofu, deli ham, ginger, garlic, curry powder, and, of course, angel hair pasta.
