Chimichurri steak salad is the salad of my dreams!

Ingredients
400g Fillet Steak
1 Tbsp Olive oil
Salt and Pepper
1 cup Cherry tomatoes, halved
1 Persian Cucumber, sliced
80g Wild Rocket

For the Chimmi Churri:
½ cup fresh Italian parsley leaves
1/4 cup fresh coriander leaves
1/4 cup Red onion, chopped
2 cloves Garlic, peeled
½ teaspoon Chilli flakes
1/4 cup Olive Oil
3 Tbsp Red wine vinegar
2 Tbsp fresh lemon juice
½ tsp Salt

Method:
Step 1: Heat a cast iron pan over medium-high heat until piping hot. Drizzle a tablespoon of olive oil over the fillet steak and season with salt and pepper. Rub the seasoning all over the steak, then place it in the skillet to cook for 4 -5 minutes on each side,e if you like medium rare, or longer for your preferred doneness. Once the steak is cooked, remove it from the pan and let it rest until ready to serve with the salad.
Step 2-Add all of the ingredients for the chime churro to a blender and blend until almost smooth.
Step 3 - Scatter the rocket, cucumber, and cherry tomatoes onto a salad plate.
Step 4 - Gently slice the fillet into thin slices.
Step 5 - Serve the steak slices on the salad and spoon over the chimmi churri.
