Thanks to ample cornstarch, this rustic dessert doesn't leak strawberry juice as it bakes in the oven. The tender, cookie-like crust is as divine as the sweet, fragrant filling. Ingredients are listed below; watch the video for directions.

Strawberry Galette
For the pastry dough:
1 1/2 cups/187g all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 stick/113g cold, unsalted butter
1 large egg beaten with enough heavy cream to equal 1/2 cup (use up to 1/3 cup for the pastry dough; save the remaining mixture for brushing on the crust)

For the strawberries:
1/2 cup sugar
3-4 heaping tablespoons cornstarch
Pinch of salt
1 lb. strawberries, hulled and cut lengthwise in half (slice large berries lengthwise into thirds)

Anti-leak insurance:
A tablespoon of cornstarch, sprinkled directly on the crust before adding the strawberry filling

Optional for glazing the berries:
1 tablespoon strawberry jam, melted
