A man named Lemuel Benedict, a retired Wall Street stockbroker, allegedly wandered into the Waldorf seeking a cure for his hangover. He ordered "buttered toast, poached eggs, crisp bacon, and hollandaise sauce." The maître d'hôtel, Oscar Tschirky, was so impressed by the combination that he put it on the menu—replacing the toast with an English muffin and the bacon with Canadian bacon. Thus, the classic Eggs Benedict was born.

Another theory links the dish to Delmonico’s Restaurant, where a patron named Mrs. LeGrand Benedict supposedly invented it out of menu fatigue.

Regardless of who gets the credit, Eggs Benedict became an iconic brunch staple, inspiring countless variations like:
