Zayka Ka Tadka
Mysore Masala Paratha
Ingredients
FOR PREPARING CHUTNEY :
1- Roasted bengal gram / Daliya dal - 1/2 Cup
2- Dry red chilli / Sukhi lal mirchi - 4 to 5
3- Garlic / Lahsun - 8 to 12
4- Lemon juice / Nimbu ka ras - Of 1/2 lemon
5- Water - As required
6- Salt - As per taste
FOR PREPARING POTATO STUFFING :
1- Oil - 1 tbsp
2- Mustard seeds / Rai - 1/2 tsp
3- Curry leaves / Curry patta - A few
4- Onion / Pyaz - 1 Finely chopped
5- Salt - As per taste
6- Turmeric powder / Haldi powder - 1/2 tsp
7- Dry mango powder / Amchur powder - 1/2 tsp
8- Boiled potato / Uble huye aloo - 2 Peeled and mashed
9- Coriander leaves / Hara dhaniya - A handful
FOR PREPARING MYSORE MASALA PARATHA :
1- Whole wheat dough / Gehu ka aata - As required
2- Water - As required
3- Clarified butter / Ghee - As required
4- tsp = teaspoon
5- tbsp = tablespoon
Instructions
FOR PREPARING CHUTNEY :
1- Take roasted bengal gram, dry red chilli, garlic, lemon juice, salt, and little water in a grinding jar. Grind it for a few seconds to prepare its chutney. Keep it aside.
FOR PREPARING POTATO STUFFING :
1- Heat oil in a Wonderchef nonstick tadka pan. Add mustard seeds, curry leaves by breaking them, and onion. Mix well.
2- Saute it for 1 to 2 minutes on medium flame. Stir it occasionally. Add salt, turmeric powder, and dry mango powder. Mix well. Once done, turn off the flame. Keep it aside.
3- Take boiled potato, sauteed onion, and coriander leaves in a bowl. Mix well. Keep it aside.
FOR PREPARING MYSORE MASALA PARATHA :
1- Take medium soft wheat dough and make two round shaped small circular pedas from the dough. Dust it with flour and roll a peda to make a roti and keep it aside. Make another roti.
2- Take one roti and apply the prepared chutney to it. Then spread potato stuffing on it. Apply water on the paratha's borders.
3- Place the other roti over it. Carefully seal the paratha borders with your fingers. Flip it on both palms to spread the stuffing evenly.
4- Meanwhile, heat a Wonderchef nonstick tawa. Grease it with ghee. Place the stuffed paratha on it and cook it on a medium flame.
5- Flip the paratha and cook it on a medium flame for 3-4 minutes and keep pressing it. Cook it well from both sides by applying ghee to it. Once it is done, take it out on a serving plate.
6- 'Mysore Masala Paratha' is ready to be served.
