糯米椰丝糕是闻名的娘惹糕点。童年时最爱的早餐。这次用月饼的模具来制作,希望为离乡背景到城市的朋友们因为找不到香蕉葉而放弃童年回味無窮的美食。也希望月饼的模具不要闲着一年才派上场一次。蓝花糯米椰丝糕用蓝花天然色素调出自然的蓝和白糯米飯配合像極蓝天白云色彩般的漂亮。制作中加入椰浆,椰丝和椰糖,吃起来富有浓浓的椰浆香味和椰糖的香甜。
Glutinous rice with coconut shredded fillings is a famous Malaysian's Nyonya cuisine. It's my childhood favorite breakfast . I use mooncake mould method to make it, hope to give an idea for friends who are away from home and staying in the cities who want to make themselves but can't find banana leaves for wrapping. I also hope mooncake mould can be used more frequently rather than once a year. Coconut milk, shredded coconut and gula melaka are added in the preparation, and it tastes delicious and yummy cum aromatic.
Steamed glutinous Rice Ingredients;
蒸糯米配料;
200g glutinous rice200克糯米
(soak for 3-4 hours浸泡3-4小时)
120 ml thick coconut milk120毫升浓椰奶
1/4 tsp salt 1/4茶匙盐
some blue peas flower juice extract (optional)
一些蓝豌豆花汁 (也可以选择不用)
Fillings Ingredients;
馅料成份;
120g shredded coconut120克椰丝
40g dark brown sugar40克红糖
30g gula melaka30克椰糖
200ml water200毫升水
1/4 tsp salt 1/4茶匙盐
1 tbsp corn flour1汤匙玉米粉
mix with 2 tbsp water与2汤匙水混合
some pandan leaves一些香兰叶
50g mooncake mould 月饼模具
This recipe can make 11 pieces each 52g
此配方可制作11粒每粒52克重
