RECIPE #1: Traditional Buffalo Chicken Sandwich
🥘 Ingredients
Chicken
1 chicken thigh (do more if you want)
Buttermilk (enough to cover chicken)
Pickle juice
Franks Red Hot Buffalo Sauce
Salt & pepper
Garlic powder, onion powder, paprika, cayenne, & MSG (if you have it)
2 cups APF
2 tbsp cornstarch & baking powder
Same seasonings as above
Neutral oil (enough to shallow fry your chicken in - about 2-3 cups)
Homemade Ranch
½ cup mayo
¼ cup sour cream
Freshly chopped dill, parsley, & chives (add whatever other herbs you want)
Freshly grated garlic
Onion powder
¼ cup buttermilk
Salt & pepper to taste
Buffalo Sauce
1 bottle of Frank’s Red Hot Buffalo Sauce
½ stick unsalted butter
2 tbsp honey
Everything Else
Potato roll
2 tbsp butter (to toast your buns)
Dill pickle slices
✍️ Instructions
In a bowl combine buttermilk, pickle juice, Buffalo sauce, salt, pepper, and seasonings listed above and whisk until combined. Add your chicken thigh(s), cover, and set in the fridge for at least 4 hours (overnight is recommended).
When you’re ready to cook, combine all of your ranch ingredients in a bowl and mix to combine. Cover and set in the fridge while you make your sandwich.
Preheat about 2-3 cups of neutral oil in a medium or large saucepan over medium-high heat while you prep your chicken. In a mixing bowl combine flour, cornstarch, baking powder, and seasonings listed above and whisk to combine. Spoon in a few drops of your brine and drop your marinated chicken thigh in, pressing the flour down, and making sure to cover every part of the chicken. Do this on both sides.
When it’s fully coated, CAREFULLY lower your chicken thigh(s) into the preheated oil and shallow fry until golden brown and cooked through, flipping occasionally. About 6-8 minutes total. Your chicken should be golden brown and reach an internal temperature of 165 Fahrenheit. Be careful not to overcrowd your pan. When it’s finished, set on a cooling rack to drain and immediately season with salt.
While that cooks, combine the buffalo sauce ingredients in a separate saucepan over medium heat and cook until the butter is melted and the sauce is combined, whisking occasionally. Remove from the heat and toss your chicken thigh in the buffalo sauce.
To finish, melt about 2 tbsp of butter in a pan over medium heat and toast your buns until they’re golden brown.
Finally build your sandwich: bottom bun, a layer of ranch, pickles, buffalo chicken, more ranch, and your top bun.
