1. Preparing the Spinach (Palak)
Wash and chop 300-350 grams of fresh spinach, removing the thick stems [00:46].
Blanch the chopped spinach in boiling water for about a minute and then strain it, reserving the blanched water for later [01:44].
2. Cooking the Dal
Wash and soak a mix of green moong dal and chana dal for 20-30 minutes [03:03].
In a pressure cooker, combine the soaked dal with the reserved spinach water, whole spices (bay leaf, cardamom, cinnamon), salt, turmeric, and ghee [04:01].
Pressure cook for one and a half whistles, then let the pressure release naturally [04:47].
3. Preparing the Gravy (Tadka)
Heat ghee in a pan and add cumin seeds, grated ginger, chopped green chilies, and garlic [05:13].
Sauté chopped onions until golden, then add chopped tomatoes and salt and cook until soft [05:47].
Add powdered spices: Kashmiri red chili powder, coriander powder, cumin powder, and turmeric powder [06:33]. Add a little water to prevent burning [06:51].
4. Combining and Finishing the Dish
Add the cooked dal to the gravy and let it simmer [07:43].
Stir in the blanched spinach and garam masala [08:08].
Prepare a final tempering by heating a small pan with ghee, cumin seeds, asafoetida, ginger, and dry red chilies. Add kasuri methi and Kashmiri red chili powder [08:37].
Pour the tempering over the dal and garnish with fresh coriander leaves [09:00].
The palak dal is now ready to be served hot with rice or roti [09:36].
