➡️Today's recipe is Chicken and Basil Pesto Sandwich.

Ingredients:

For the Chicken:
2 chicken breasts (cut in half)
1 tsp salt
1 tsp black pepper
1 tsp dried oregano
3-4 tbsp high-temperature resistant cooking oil
50-60g butter

For the Basil Pesto:
fresh basil leaves (washed and trimmed)
1 garlic clove (adjust to taste)
40-50g Parmesan cheese
½ tsp table salt
¼ tsp freshly ground black pepper
300 ml extra virgin olive oil (adjust for desired consistency)
1 tbsp fresh lemon juice
2 tbsp toasted pine nuts (or cashew nuts/walnuts/almonds)

For the Sandwich:
Fresh mozzarella cheese (or a suitable substitute)
2 slices of bread per sandwich
1 tbsp pesto per side
½ tbsp olive oil for toasting

Instructions:

1. Prepare the Chicken:
Slice chicken breasts in half to speed up cooking.
Season both sides with salt, pepper, and dried oregano.
Drizzle with cooking oil, ensuring chicken is evenly coated. Let it rest to absorb flavors.

2. Make the Basil Pesto:
Add basil leaves to a blender along with garlic, Parmesan cheese, salt, pepper, and lemon juice.
Pour in extra virgin olive oil, adjusting to desired consistency (thicker or thinner).
Add pine nuts (or substitute). Blend briefly to maintain texture.

3. Cook the Chicken:
Heat a pan over medium-high heat and add chicken pieces.
Cook for about 3 minutes per side until golden brown and cooked through.
Lower the heat to medium, add butter, and baste chicken by spooning melted butter over it. Remove from heat.

4. Assemble the Sandwich:
Spread 1 tbsp of pesto on each slice of bread.
Layer with cooked chicken and fresh mozzarella cheese.
Drizzle olive oil on the outside of the bread slices for toasting.

5. Toast the Sandwich:
Place the sandwich in a heated pan.
Press gently and toast until golden brown on both sides. Optionally, cover with a lid to help melt the cheese.

6. Serve and Enjoy!
Slice the sandwich in half and serve warm.
