Soft and Creamy Ricotta and Almond Tart

Hello everyone 😀 This is the season of ricotta in Italy. When female sheep give birth to lambs , they have lots of milk. Ricotta is a kind of fresh cheese from milk. It is a delicious ingredient in a cake. Today I baked ricotta and almond tart.

Here are the ingredients for the crust
300 gr. white bread flour
80 gr. sugar
2 medium size eggs
80 gr. butter
a pinch of salt
1 tsp. vanilla extract
½ lemon zest
1½ tsp baking powder

For the filling
500 ricotta cheese
5 tbsp white sugar
50 gr ground almonds
1 lemon zest

powdered sugar

Baking pan 24-25 cm in diameter
