Authentic Karachi Biryani Recipe – Delicious Spicy Biryani at Home!

*Ingredients:*
Basmati rice
Chicken (or beef/lamb as preferred)
Potatoes
Tomatoes
Onions
Yogurt
Garlic and ginger paste
Biryani masala (available in stores or homemade)
Green chilies
Fresh cilantro and mint
Whole spices (cumin, cloves, cardamom, bay leaves)
Cooking oil
Salt and turmeric

*Instructions:*
1. *Prepare the Rice:* Wash and soak the basmati rice. Cook it partially with whole spices until half done.
2. *Cook the Chicken:* In a large pot, heat oil and fry the onions until golden brown. Add garlic and ginger paste, and cook until aromatic. Add chicken pieces and cook until they are browned.
3. *Add Spices and Potatoes:* Mix in the biryani masala, salt, and turmeric. Stir in diced tomatoes and yogurt, then cook until the chicken is tender. Add the potatoes and cook until they are soft.
4. *Layer the Biryani:* In a separate large pot, layer the partially cooked rice over the chicken mixture. Sprinkle fresh cilantro, mint, and green chilies between layers.
5. *Dum Cooking:* Cover the pot with a tight lid and cook on low heat (dum) for 20-30 minutes to allow the flavors to meld together.
6. *Serve:* Gently mix the biryani before serving. Enjoy your Karachi Biryani with raita, salad, or a side of pickles!

*Tips:*
For a richer flavor, add a few drops of kewra or rose water before the final steaming.
Adjust the spices according to your heat preference.
