PISTACHIO SAFFRON CRACKERS

Ingredients

3 tbsps blanched, peeled and slivered pistachios
A generous pinch of saffron
2 tbsps + ¼ cup ghee
2 tbsps edible gum raisin (gond)
½ cup refined flour (maida)
1/3 cup gram flour (besan)
1/3 cup powdered sugar
1 tsp green cardamom powder
2 tbsps chopped almonds
2 tbsps chopped cashew nuts
3 tbsps milk
Coffee for serving

Method

1. Preheat the oven at 180°C.
2. Heat a pan. Add saffron and toast on low heat for a minute.
3. Transfer in a mortar and crush with the help of a pestle.
4. Heat 2 tbsps ghee in a pan. Add gum raisin and cook till puffed and crisp.
5. Transfer in a mortar and crush with the help of a pestle.
6. Sift refined flour, gram flour, powdered sugar and green cardamom powder in a bowl.
7. Add saffron, almonds, cashew nuts and pistachios, crushed gum resin and remaining ghee and mix well.
8. Add milk and knead to form dough.
9. Place a silicon sheet on the counter, place the dough and roll lightly. Place another silicon sheet on top and roll into thin sheet. Remove the upper silicon sheet and trim the edges. Cut into rectangles.
10. transfer the silicon sheet on baking tray and bake for 10-12 minutes.
11. Allow to cool and serve with coffee.
