Recipe
1. For the syrup: steep 4 earl grey teabags in 1 cup of water. Then transfer the tea to a stove pot and melt in 1 cup of sugar over medium heat and you’re done!
2. To steep the milk, I heated up 1 cup of oat milk over medium low heat, and steeped 2 teabags for 4-5min. Make sure it doesn’t come to a boil. I left it to chill in the fridge after for a few hours but it’ll help draw out the flavours a bit more.
3. For the matcha, sift 4g matcha, and mix in 15g of water to create the paste. Then add in another 25g water and whisk in zig zag motion until nice and frothy.
4. For the cream top, whisk 80g heavy cream, 1 tsp earl grey syrup and a pinch of salt until it has thickened but still runny.
5. To assemble the matcha, add in ice, another tsp of earl grey syrup, 100-120mL of the earl grey steeped milk, matcha and the cream top! Enjoy ❤️
