Setting a tempo

One question I often get is, how do you set the tempo for a score? Perhaps because expectations are set by audio or MIDI software, people sometimes expect this to be a setting you make somewhere separate from the score itself. But just like you control volume by adding actual dynamic marks to the score, you control tempo by adding actual tempo markings.
