Try these delightful Brazil Nut Spanakopita Triangles for a tasty twist on a classic Greek favorite. These crispy, savory pastries are filled with a rich and nutty Brazil nut and spinach mixture, making them a perfect appetizer or snack option.

INGREDIENTS:
• 1 16 oz package of pre-made Phyllo pastry sheets
• 2 cups Brazil nuts, chopped (https://foodtolive.com/shop/brazil-nuts/)
• 3 сups fresh spinach
• 2 tbsp ground golden flaxseeds (https://foodtolive.com/shop/organic-g...)
• 2 tbsp olive oil (+1 cup for brushing onto Phyllo sheets)
• 2 tbsp lemon juice
• 1 large onion, diced
• 2 garlic cloves, minced
• 1/2 tsp salt (https://foodtolive.com/product-catego...)
• 1/4 fresh ground pepper (https://foodtolive.com/shop/organic-w...)

INSTRUCTIONS:
1. Preheat your oven to 175°C (350°F).
2. Make a flax egg by mixing ground flaxseeds with water in a small bowl. Set it aside.
3. Boil the spinach in a pot of water, then quickly cool it in ice-cold water to keep its green color.
4. In a large frying pan, heat 2 tbsp of olive oil. Add diced onion and cook until it's soft. Then add diced garlic and cook until it turns translucent and smells nice.
5. Squeeze out as much water as possible from the boiled spinach. Chop it finely and add it to the pan.
6. Take it off the heat and mix in the flax "eggs," lemon juice, salt, pepper, and chopped Brazil nuts.
7. Now, take the pastry sheets and lay out one strip. Brush it lightly with olive oil. Place another strip on top and brush it with oil too.
8. Put a heaping teaspoon of filling at the bottom of each strip. Fold the pastry around the filling to make triangles.
9. Brush the tops of the triangles with olive oil and sprinkle sesame seeds on them. Bake for about 20 min until they turn golden. Enjoy!
