Potato Cheese Croquette
Serving = 8-10


The Recipe.
Potatoes. 400gm
Cheese. 100gm
salt. 10gm
Pepper. 5gm
chilli flakes. 10gm
spring onion. 20gm

For crumbing
plain flour
milk & egg mixed
Bread crumb

For deep fry
Cooking oil


Preparation,
Heat water in a pot to a simmer, then add the potatoes, cover & simmer for about 15 minutes, until it can be mashed easily. Dry the potatoes on a towel, allowing them to steam to remove excess moisture, then transfer to a large bowl. Mash the potatoes until no large chunks remain. Add the salt, pepper, chilli flakes, spring onions & cheese. Mix until evenly incorporated. Shape the potato mixture into 2.5 inch roll. Separate the flour, milk egg mixture & bread crumbs into separate bowls. Dredge the croquettes into the flour, shaking off any excess, then dip them into the eggs & then coat them evenly in the bread crumbs. Heat oil in a pot to 180°C/350°F. Fry few croquettes at a time until golden brown, then drain on a paper towels with a sprinkle of salt. Cool, then serve with aioli sauce or yogurt sauce.
