Join me, Kenna, on an unforgettable Puerto Rican adventure as I return to the island after 20 years to reconnect with my roots and whip up some authentic Pinchos! 🇵🇷 In this episode of Kenna's Kitchen, we immerse ourselves in the vibrant culture and mouth-watering flavors of Puerto Rico. Our journey takes us from the bustling streets of Old San Juan to the serene beaches of Humacao, with a special stop in Quebradillas where my family has deep ties.

Today, I’ll show you how to make those delicious grilled chicken skewers, or "Pinchos," just like the ones you find at local food trucks. We'll marinate the chicken in a rich blend of olive oil, adobo, oregano, garlic powder, cumin, and vinegar, then finish them off with a sweet and tangy barbecue glaze. And of course, no meal is complete without arroz con gandules and some corn on the side!

Ingredients:
2 lb boneless chicken thigh, cubed
2 Tbsp Olive Oil
1/2 Tbsp adobo
1 tsp garlic powder
1/2 tsp cumin
1/4 tsp oregano
1 packet of sazon

BBQ sauce for basting

Directions:
Cube chicken, and season with all the ingredients except the bbq sauce.
Soak skewers and marinate chicken for atleast an hour.
Skewer chicken, packing them tight to keep them juicy.
Grill over high heat for 10-13 minutes, rotating evenly while cooking.
When chicken hits 165 internal temp, baste them with your bbq sauce and cook for 1 more minute to carmalize the sauce.
Top each skewer with a slice of bread and serve!
