If you're looking for a fun and festive dessert to serve on the 4th of July, this Patriotic Poke Cake fits the bill, and it's absolutely delicious. It starts with store bought cake mix and a couple of boxes of Jell-O, and it's topped with a sweet and creamy combination of Cool-Whip and marshmallow cream. Read on for the easy recipe.

Patriotic Poke Cake

white cake (store bought cake mix baked according to package directions)
1 (3 oz.) package blueberry Jell-O
1 (3 oz.) package strawberry Jell-O
1 cup boiling water, divided
1 (8 oz.) tub Cool Whip
1 (7 oz.) container marshmallow fluff
*fresh strawberries & blueberries (optional)

After baking cakes according to directions on package, allow to cool completely. Then use the back end of a wooden spoon to poke holes into cake about an inch apart. Place Jell-O in separate bowls and mix each flavor with 1/2 a cup of boiling water until Jell-O is dissolved. Spoon liquid Jell-O into holes in cake, alternating the colors. Place in refrigerator to chill for 15 minutes. Combine Cool Whip with Marshmallow fluff to make frosting. Frost cakes, and decorate top with fresh fruit. Chill cake 2 hours before serving.
