No one would pick this as a vegetarian dish. The flavour combinations you have seen in other dishes but never before in a quiche. So forget your perception of a quiche and focus on mushrooms, leeks, onion, cream, grated cheddar and Camembert. Wrap that flavour up with your favourite pastry, or in my case low fat flakey puff pastry. This tastes like luxury food.

Mushroom Leek And Camembert Quiche: Serves 4 plus

1 sheet of short crust savoury pastry
1 sheet of low fat flakey puff pastry
2 tbsp of salted butter
1 tbsp of olive oil
1 large brown onion roughly chopped
250 grams Swiss brown mushrooms
250 grams white button mushrooms
Salt and pepper 1/2 tsp each
1 tsp garlic powder
1/2 a leek thinly sliced
3 tbsp chopped fresh parsley
1 cup of Edam cheese grated
80 grams of sliced Camembert cheese
3 spring onions or scallions cut finely

Binder for the quiche filling:
5 medium eggs
300mls of full cream
About 10 red chili flakes or pinch of cayenne pepper
1/2 tsp garlic powder

Blind Baking Pastry:
Use the short crust pastry for the base in a greased quiche dish. Use the low fat flakey puff pastry for the sides. Bake for 15 minutes only at 180 degrees C. Use baking or parchment paper with 300 grams of rice to stop air from getting under the pastry base.

Baking the Quiche.
This will vary depending on your oven. I cooked mine at 150 degrees C for 50 minutes of fan bake. To check jiggle the quiche . If the centre does no move and is dry to the knife test , then take it out of the oven.

MUSHROOM VITAMINS:
Riboflavin (B2): Crucial for energy production and metabolism of carbohydrates, fats, and proteins.
Niacin (B3): Helps metabolize macronutrients and maintain healthy red blood cells.
Pantothenic Acid (B5): Aids in hormone production and supports the nervous system.
Folate (B9): Essential for cell growth and development.
Vitamin B6: Helps the body form red blood cells, proteins, and DNA.
Biotin: Important for skin and hair health.
Vitamin D: Leave your mushrooms in sunlight for half an hour before using to in crease their Vitamin D2.
