Truth BBQ,
I have a special video for you all today as we visit the Truth barbeque location in Brenham, TX.
Let’s get this right I’m not culinarily educated, my degrees are in Civil Engineering, Construction Engineering Management, and 3D Bim technology. In other words, I build great big things and travel around the world, so I indulge myself in local traditions whenever I can and today is no exception.
We have traveled about 70 miles NW of Houston to the small town of Brenham. There just off RT 290 is a small tattered building with a 1000-gal smoker outside, under the sign letting you know there is something special here you should stop! That is where this story should end, however, it cannot end there.
There are three other buildings littering the property and smoke profoundly spews from the one attached to some outside seating. The property reminds you more of the back yard then a public restaurant. There is seating outside by picknick tables either covered or uncovered so you can bask in the sun if that is your thing, I like to set up close to the building where the smokers are. There you can smell the sweet peppery oak flavor as it swirls around the roof, filling your senses with temptation.
As I talked to Jonathon the manager there, I found out they cook a Flintstone sized beef rib on Saturdays only. We were lucky enough to be there on Saturday and I was able to try these elusive Flintstone sized behemoths. We ordered the succulent brisket that you can suck up with a straw, the jaw-dropping pork ribs that are lightly coated in a jelled pepper sauce, and then the vindicating smoked to absolute perfection beef ribs. The inside where you order has these succulent cakes that make your mouth water just looking at them in the case, with their pastel colors and designs. Then the aromas from the meat, as they unwrap it from the wax paper fills the air with spices and smoke flavors that propel your taste buds into dynamic skepticism as you wait in line to order.
You step up to tell the butcher what you desire as your nose sniffs the beef fat, post oak smoke, and the aromatic black pepper from the briskets and beef ribs. You then celebrate in your mind as you observe from over the counter, the juicy slices as he cuts the meats and weights them before placing them on your plater. The tenderness displays itself to you as the slices relax and spread open to suggest you come on in and partake in their heavenly tender flesh. This is truly the food of the gods.
No need for sauce here it just gets in the way of perfection already before you. This is a true Truth in BBQ that if you are in Texas you need to experience. There are no frills here this is just a shack on side of the road that serves mind-blowing barbeque. There is nothing to see here and no real story other than they truly know what it takes to astonish your mouth.
