Tandoori aloo chaat
For marination
Ingredients Quantity
Big Boiled potatoes 3no.
Curd ½ cup
Coriander powder 1 ½ tsp
Cumin powder ½ tsp
Red chili powder 2 tsp
Turmeric powder ¼ tsp
Black salt ½ tsp
Green chili 2-3 no.
Ginger 1 tbsp
Kasuri methi 1 tbsp
Ginger garlic paste 1 tbsp
Mustard oil 3 tbsp
Salt to taste
Water as required
For sweet chutney
Water 2 cup
Sugar ¼ cup
Dry ginger powder 1tsp
Aam chur powder 1½ tsp
Red chili powder 1tsp
Chaat masala ½ tsp
Black salt ½ tsp
Salt to taste
Saunf powder ½ tsp
For green chutney
Ginger 1 inch
Green chilies 3 no.
Ginger 2 no.
Mint leaves half bunch
Coriander leaves 1 bunch
Black salt ½ tsp
Chaat masala 1 tsp
Ice 2 cubes
Lemon juice 2 tsp + for sprinkle
Salt to taste
Water as required
Curd prep
Curd ½ cup
Sugar 2 tsp
Garam masala to sprinkle
Nylon sev to sprinkle
Method
1. Peel boiled potatoes and remove in a bowl, Prick it with toothpick.
2. Now in a bowl add curd, coriander powder , cumin powder , red chili powder, turmeric powder, black salt , green chilies, ginger , kasuri methi, ginger garlic paste , mustard oil , salt and water as required, whisk well .
3. Add the potatoes to the marination and coat well.
4. Let the potatoes rest for 30 mins.
5. Take pan add water , sugar, dry ginger powder, aam chur powder, red chili powder , chaat masala , black salt , salt, saunf powder and let it cook till it becomes thick.
6. Take a grinder, add ginger, green chilies, garlic, mint leaves, coriander leaves, salt , black salt , chaat masala , lemon juice , ice cubes and water as required , grind it properly.
7. Now take a bowl add curd and sugar, whisk it well.
8. Preheat the oven on 180* for 15 to 20 mins.
9. Now in the microwave tray keep the marinated potatoes and microwave it.
10. After 10 to 12 mins remove the tray from oven and flip it and coat the potatoes again with the marination.
11. Now cook for more 10 to 12 mins.
12. Now for serving, take a plate cut the potatoes in cubes ,add chaat masala, red chili powder, garam masala powder, lemon juice , curd, sweet chutney, green chutney, nylon sev, mint leaves.
13. It’s ready to serve.
