RECIPE:
Dairy Free Fruit Tart: Makes 4 4-inch tarts
INGREDIENTS
1 box pie crust (defrosted, with 2 9” crusts)
1 13.5 oz. can full fat coconut milk
2 ½ tablespoons cornstarch
1 teaspoon non-alcoholic vanilla extract
¼ cup granulated cane sugar
1 teaspoon lemon zest
Berries of choice like blackberries and raspberries for decorating
Non-dairy whipped cream (optional)
EQUIPMENT
4 4” non-stick tart tins
Rolling pin
Plastic wrap
DIRECTIONS
Preheat oven to 400 degrees.
Working with one crust at a time, gently unroll pie crust. Use a rolling pin to flatten out the dough slightly. Use a guide to cut circles out of the dough. Gently fit the circles of dough into the tart tins and remove the excess dough. Prick the bottom of the tart shells with a fork and place on a sheet pan in the freezer for 10 minutes or until solid.
Remove the tart shells from the freezer and place directly in the preheated oven. Bake for 15-25 minutes or until edges are golden. Allow to cool completely on a cooling rack before filling.
MAKE THE FILLING:
In a large bowl, slowly mix together cornstarch and coconut milk until there are no lumps. Add sugar and stir well. Pour the mixture into a medium pot over medium heat. Bring to a boil and until the mixture thickens slightly. Remove from the heat and add the vanilla extract and lemon zest and stir well. Pour into a bowl and cover with plastic wrap, making sure that the plastic wrap sits on top of the filling so a film doesn’t form. Chill for 2 hours.
Once the filling is chilled, fill the cooled tart shells. Top with berries of choice and return to the fridge for another 10 minutes. Serve cold.

Christy returned to Broadway in her mid twenties and learned to be a puppeteer in the Tony-Award winning ‘Avenue Q’. Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”.
