Red Beef Enchiladas & Homemade Sauce

One of my favorite dishes to prepare is enchiladas because they can be filled with just about anything. Today we are filling them with a very well seasoned ground beef filling, and we are also going to make our own chile guajillo enchilada sauce. #beefrecipe #enchiladas #redsaucerecipe #mexicanfoodrecipes #mexicanfood

Ingredients for the enchilada sauce

5-6 Chile Guajillo
Chiles de Arbol for Spice (Optional)
2 Roma Tomatoes
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 Tbsp Mexican Oregano
1 Tbsp Tomato or Chicken Bouillon or as needed
1 1/2 to 2 Cups of Water or Chicken Broth

Ingredients for the Enchilada Filling

1 Lb Ground Beef (80/20)
1/2 White Onion ( one onion if making pico de gallo)
3 Jalapeños or one green bell pepper
2-3 Garlic Cloves
1 Tbsp Chili Powder
1/4 tsp Cumin
1/2 Tsp Salt
1/2 Tsp Black Pepper
3-5 Oz Tomato Sauce
12 Corn Tortillas

Ingredients for the Pico de Gallo

2 Roma Tomatoes
1/2 White or Red Onion
1-2 Serrano or Jalapeño Peppers
1/2 Cup Chopped Cilantro
Salt & Pepper
1/2 Lime

Topping Suggestions
Queso Fresco, Sour Cream, Queso Cotija, Lettuce, Avocado, Black Olives
