Easy Caprese Chicken pairing with Jean-Jacques Auchere Sancerre 2017
INGREDIENTS
1 1/4 pounds of boneless skinless chicken breasts
4 tablespoons of olive oil
3 tablespoons of balsamic vinegar
4 garlic cloves
1 teaspoon of Dijon mustard
1 teaspoon of Italian herb blend
1/2 teaspoon of onion powder
2 cups of grape tomatoes halved
6 Oz mozzarella cheese
3 tablespoons of basil pesto
balsamic reduction for drizzle
Salt and pepper to taste

Directions
1. for chicken marinade mix together 3 Tbsp of olive oil, 2 Tbsp balsamic, 2 garlic cloves minced, Dijon mustard, onion powder, Italian herb blend. Place chicken in marinade and put in fridge for minimum of 2 hours.
2, On medium temp fry chicken in nonstick pan for 4 minutes on both sides.
3. in bowl mix cherry tomatoes, 1 Tbsp olive oil, 1 Tbsp balsamic vinegar and salt to taste. Add tomatoes to same pan as chicken and cook with lid on for 5 minutes.
4. Add basil pesto on top of chicken in pan and place cheese slices on top of pest put lid on and cook for 2 minutes more until the cheese is melted and the chicken is cooked to 165 degrees
