FULL RECIPE:
Ingredients
Carrots- 1 kg
Milk- 1 cup
Sweetened condensed milk- 1 cup
Milk mawa powder- 1/2 cup
Ghee- 4tbsp in pressure cooker+3tbsp at the finish
Cardamom powder- 1 tsp
Golden raisins- 1 tbsp
Almonds- 2 tbsp, chopped or crushed
Cashews- 2 tbsp, chopped or crushed

Peel and grate carrots. You can also grind them in mixer instead of grating. Heat ghee in a pressure cooker and fry all the dry fruits until golden. Add cardamom powder and grated carrots and cook for 5 minutes while stirring continuously. Add milk and close the lid of pressure cooker. Cook for 2-3 whistles. Once ready to open, transfer everything from pressure cooker to a pan. Cook for 5 minutes on medium to high flame. Now add condensed milk and mix well. Cook on medium to high flame until all the milk is absorbed while stirring constantly. Add mawa powder and ghee and mix well. Keep cooking and stirring until ghee separates. Delicious gajar ka halwa is now ready. Serve warm with some chopped nuts on top. Enjoy!
