Cheese Potato Sticks Recipe

Ingredients

1 Giant Russet Potato, peeled and cut into 3 pieces
Salt
1/4 cup Corn Starch
Neutral oil such as Vegetable Oil

Instructions

1. Place the potato pieces in a pan filled with water. Turn on the heat to high and add salt. Wait for it to come to a boil, then reduce the heat to medium-low.
2. Set a timer for 15 minutes and let the potatoes cook until fully tender.
3. Drain the water and mash the potatoes with a fork or potato ricer.
4. Add the corn starch and mix well. Transfer the mixture into a ziploc bag and flatten it out until it has even thickness.
5. Freeze the mixture for at least 1 hour.
6. In a pan, heat up the neutral oil on medium-high heat.
7. Fry the potato mixture until golden brown on all sides.
8. Immediately season with salt and any other desired seasonings.
9. Strain the oil through a fine sieve and reuse it for frying.
