I was always taught to waste as little food as possible. Making bread dumplings out of old and leftover bread it's the best way to minimize food waste. You can make them out of any bread you have lying around.

📜This recipe will make up to 6 bread dumplings.

🔹Ingredients:🔹
~ 400g / 0,8lbs bread
250ml / 1 cup warm milk
½ shallot
1 egg
- 2 tbsp chopped parsley
2 tbsp diced pancetta or bacon

- breadcrumbs (optional)

🔹Preparation:🔹
1. Make sure you dice up your bread in to 1 (0,3'') to 2 (0,7'') cm big cubes. Place the bread cubes in a large bowl.
Pour over your warm milk a little at a time. While you pour in the milk squish the wet cubes with your hands. Leave the bread to soak up all the milk.
2. Dice up your shallot into small pieces.
3. Put pancetta into cold pan and gradually heat up the pan on medium heat. Fry off pancetta until it becomes crispy and the fat renders into your pan. Take your pancetta out of the pan, but leave the fat.
4. Put in your diced shallots and sauté until it becomes translucent. It shouldn't take it very long, because it's a very delicate. Add in your parsley and pancetta. Mix well and turn off the heat. Set aside to cool.
5. Add the cooled mixture to your bread bowl and mix well. To it add your egg and incorporate it well.
At this stage, make a small ball. If it sticks together but not to your hands it has a prefect texture. Otherwise if it sticks to your hands too much add in a little bit of breadcrumbs.
To easily shape the bread dumplings, wet your hands with cold water.
6. Bring at least 1 L of water to a boil and add 1 tbsp of salt. Add your bread dumplings to the water and cook them for 8 to 10 minutes. Depending on their size.
7. Once cooked, removed them from the water and serve right away.

Tip: I would suggest you only cook up as many as you will eat. They are good reheated as well, but not as good when they are fresh. You can freeze the ones you don't cook. You can put frozen dumplings directly into a boiling water but add around 2 minutes to the cooking time.

They go exceptionally well with dishes like goulash, stews and rich sauces.
