Ingredients:
4 medium-sized potatoes, peeled and cut into cubes
2 tablespoons corn flour (cornstarch)
2 tablespoons all-purpose flour
Salt to taste
Oil for frying
1 tablespoon oil for cooking
1 onion, sliced
1 bell pepper (capsicum), sliced
2-3 green chilies, sliced
2 cloves garlic, minced
1-inch piece of ginger, minced
2 tablespoons soy sauce
1 tablespoon tomato ketchup
1 tablespoon chili sauce
1 tablespoon vinegar
1 teaspoon sugar
Spring onions for garnish (optional)

Instructions:
1. In a bowl, mix the corn flour, all-purpose flour, and salt. Add the potato cubes and coat them evenly with the flour mixture.
2. Heat oil for frying in a deep pan or wok. Once hot, fry the coated potato cubes until they are golden and crispy. Remove them from the oil and drain excess oil on paper towels.
3. In another pan, heat 1 tablespoon of oil. Add minced garlic and ginger, and sauté for a minute until fragrant.
4. Add sliced onions, bell peppers, and green chilies. Stir-fry on high heat for 2-3 minutes until the vegetables are slightly tender but still crisp.
5. In a small bowl, mix soy sauce, tomato ketchup, chili sauce, vinegar, and sugar. Pour this sauce mixture over the stir-fried vegetables.
6. Add the fried potato cubes to the pan and toss everything together, ensuring the sauce coats the potatoes and vegetables evenly.
7. Cook for another 2-3 minutes on medium heat, stirring occasionally, until the sauce thickens and coats the potatoes.
8. Garnish with chopped spring onions if desired.
9. Serve hot as a snack or as a side dish with rice or noodles.
