We are camping this week in our RV and I wanted to show how to eat higher protein while staying low carb when vacationing. These are easy meals that you can make while camping or even at home!

YOGURT PARFAIT
3/4 cup low-carb yogurt
1/4 cup keto granola
3/4 cup mixed berries

Total Protein = 20-22 grams

ITALIAN CHICKEN SALAD
1 teaspoon avocado oil
8 oz skinless, boneless chicken thighs
garlic powder
oregano
10-12 basil leaves
8 chives
5 cherry tomatoes
1 tablespoon sliced olives
1 oz fresh mozzarella balls
2 tablespoons avocado mayo

Sear and cook chicken in a skillet over medium heat, seasoning with salt, pepper, garlic powder and oregano. Once chicken is cooked through, remove and place on a cutting board to cool for 3-5 minutes. Top with remaining ingredients. Chop into bite sized chunks.

Total Protein - 41 grams

CREAMY SAUSAGE & PEPPER PASTA
8 oz low carb pasta (from Kaizen)
1 teaspoon avocado oil
1 lb ground pork or sausage
1/4 yellow onion, diced
1 red bell pepper, diced
1 yellow or orange bell pepper, diced
3-4 cloves garlic, minced
1/2 cup heavy cream
3-4 handfuls baby spinach

Prepare pasta according to package directions. Cook ground pork or sausage in a skillet over medium high heat until browned and cooked through. Remove from skillet and set aside. To the skillet add onion and bell pepper. Cook until softened. Add garlic and cook for 1 minute. Stir in heavy cream and let cook for one minute. Return sausage and add spinach. Stir until spinach is wilted. Stir in pasta.

Total Protein per serving (makes 4) - 40 grams
