Follow this simple recipe for delicious cold Korean noodles, with a spicy, Korean pear and red pepper sauce.

I live in Korea and I am cooking a new Korean dish every week.
This week it is:

Bibim-naengmyeon 비빔냉면

Naengmyeon noodles 200g 냉면 메밀면
Beef 50g 소고기
Korean pear 1/4 배
Cucumber 1/2 오이
Pickled radish 30g 무
Sesame seeds 3T 참깨

Bibim Sauce:
Onion 1/4 양파
Korean pear 1/2 배
Minced ginger 1tsp 다진생강
Minced garlic 2tsp 다진마늘
Green onion 1/2 파
Red pepper flakes 1/4cup 고춧가루
Sugar 2tsp 설탕
Salt 1tsp 소금
Soy Sauce 1T 간장
Gochujang 2T 고추장
Vinegar 2T 식초
Sesame oil 2tsp 참기름
Oligosaccharide 2T 올리고당

Use a packet of Korean “mul-naengmyeon”, which will include noodles and broth.
Add 300ml water to the broth from the packet, and refrigerate for just over 2 hours.
Mix together all of the “bibim sauce” ingredients in a blender. Blend for about 1-2 minutes. If you want a redder mixture then add less onion and pear.
Slice some pear and cucumber. You can slice into matchsticks or use a peeler to make thin strips.
Cook the noodles. Check the packet directions. Usually the noodles are dry, then they will need to be cooked for about 5 minutes. If the noodles are a little soft (like jerky) then cooked for just over 1 minute.
Rinse and wash under cold water. Wash well to remove the starch. Use an ice water bath if possible.
Plate the dish. Add just a little ice-cold broth with ice. Sprinkle sesame seeds over the top.Enjoy
