I am a firm advocate of self-care and implementing little habits to look after ourselves day to day. I believe the relationship we have with ourselves will always be imperative in shaping how we view the world and our relationships with others. Since adopting a slow living, minimalist & simple living lifestyle, self care has never become more important.
To have a strong sense of self-worth, self-respect and self-compassion, we are best equipped to deal with challenges and times of hardship, utilising them as opportunities to learn and grow. It is the old cliche but you really cannot truly learn and show love to others until you know how to love and respect yourself.
I want to share how I practise self-care and self-love whilst living alone, all of which has helped me to cultivate stronger relationships with those around me and grow as a person.

BUTTERNUT RAVIOLI RECIPE - 1 portion

Ingredients
(Pasta)
-1 medium egg
-100g 00 flour

(butternut filling)
-1/2 small butternut squash diced
-50g feta cheese crumbled
-handful fresh basil leaves

(tomato sauce)
-1-2 cloves of garlic finely chopped
-1/2 tin of chopped tomatoes
-handful of fresh basil leaves

1. Preheat your oven to 200 C and prep your filling ingredients
2. Add the diced butternut to a roasting tray with seasoning and olive oil, toss well and roast until soft and golden for approx 25-30 mins
3. Meanwhile weigh out the flour and add the whole egg to a dip in the middle. Combine together to form a firm dough, kneading with your hands for 5-10 minutes. (should be a play dough like texture)
4. Place the dough in a tupperwear and allow to rest in the fridge.
5. Meanwhile once the butternut is cooked, mash together in a mixing bowl and combine in the feta cheese with the chopped basil. Leave to oneside.
6. Once the dough has rested roll out thinly into small strips approx 5 inches wide. (I used a pasta machine to get my dough super thin but you can use a rolling pin - look to see if the dough allows light through but not too thin it would rip! This test allows us to see whether it is thin enough)
7. Place teaspoon amounts of the butternut mixture into the centre of the pasta sheets and fold over to form little parcels. Make sure to add a drop of water before closing so they stay sealed.
8. Once the ravioli parcels are prepped, in a pan on a medium heat, add a litle oil and fry off the garlic until aromatic.
9. Add in the tinned tomatoes, basil and seasoning to taste.
10. Boil water in a pan with some salt and add in the ravioli to cook - they take approx 3-5 mins but should float to the top once cooked.
11. Add the cooked ravioli to the tomato sauce pan with a splash of pasta water and toss together until combined.
12. Serve immediately with an extra scattering of basil and parmesan. Enjoy :)
